Vietnam is world-famous for its delicious and accessible street food, from fragrant pho to crispy banh mi. However, for the adventurous foodie and local culinary enthusiasts, the country also boasts a selection of exotic delicacies that might look terrifying at first glance but are highly prized, especially as ultimate drinking snacks, or 'mồi nhậu.' Here are three unusual Vietnamese dishes that challenge the senses but reward the brave.

First on the list is the infamous coconut worm (đuông dừa), a specialty of the Mekong Delta. These fat, squirming beetle larvae live inside the trunks of coconut trees. The most traditional—and extreme—way to eat them is alive, swimming in a bowl of spicy fish sauce with chili. Despite the intimidating sight of a wriggling worm, those who dare to try it describe the taste as rich, buttery, and incredibly creamy, similar to egg yolk mixed with coconut milk.

Another highly sought-after delicacy is the sandworm (rươi), harvested primarily in northern provinces during late autumn. These multi-colored, writhing worms are used to make 'chả rươi' (sandworm omelet), a beloved seasonal comfort food in Hanoi. Prepared with eggs, minced pork, tangerine peel, and fresh dill, the worms melt into the batter during frying, creating a deeply savory, aromatic, and nutritious pancake that bears no resemblance to its creepy-crawly origin.

Lastly, cicadas and various crispy fried insects are a staple in many rural drinking spots. Harvested during the transition into summer, these insects are meticulously cleaned, stuffed with peanuts, and deep-fried until golden brown. They offer a satisfying crunch and a nutty flavor that pairs perfectly with a cold glass of local beer. These unique dishes showcase the diversity of Vietnamese gastronomy, proving that true culinary treasures often lie beyond our comfort zones.
